You’ll find this sushi restaurant in a nook of a busy quarter. The third-generation owner-chef grew up in this town and welcomes his customers cheerfully. He values his relationships with producers, and gets wasabi from a farmer in Shizuoka, while the red uni in the summer and karasumi in autumn come from a supplier in Karatsu. Enjoy sushi prepared using Edomae technique, including flounder kobujime and gizzard shad marinated in vinegar.
