Chef Tetsuya Fujiwara is supported by his wife, who studied with him in Europe. Remembering the tastes of past meals, he conjures once-felt moods in his cooking. The uniquely named dishes stir the imagination and come with surprising textures and in unusual combinations. The bread full of air bubbles is an original idea and uses the latest cooking techniques. Japanese ingredients, like wasabi from Masuda City and early-summer ayu and hamo, are used.
