A restaurant where soba culture from the Edo period is alive and well. The chef serves sarashina that abides by ‘santate’– the three principles for freshness: freshly ground, freshly kneaded and freshly boiled. The set menus all end with soba, but the real appeal is being able to enjoy cuisine from all over, like seaweed from Toyama and seafood from Hokkaido. soba variations, such as truffle soba and soba with yuzu, are also favourites.
