In charge of the kitchen at this sister restaurant of Ginza Kojyu is a head chef who trained both here and at a ryotei in Kyoto. The memorable dishes are delicate yet bold. In spring, the razor clam and wild vegetables is a standard dish. In the summer, the offerings include takikomi-gohan made with onions from Awaji Island and hamo. Note the creative touches that accent the orthodox style.
