Kanda

Born into a family that owned a Japanese restaurant, Hiroyuki Kanda trained in Osaka and worked in Paris. He set up a counter at his own restaurant to be able to tell what customers like and dislike. That way, he can serve them the appropriate food and sake instantly. Out of his respect for his home town, he gets Tokushima awabi and Naruto tai shipped in from there. The soup, the core of the menu, often features shinjo, and the citrus gives it a nice tang.
