Ginza Koju

The owner-chef likes to prepare dishes that stir the souls of his customers, so ingredients are carefully selected for a rich, bold flavour. Centred on traditional techniques, the dishes feature a masterful, modern sensibility. The quality of the ingredients is exemplary – he orders seafood from his home prefecture of Shizuoka as well as red sea bream from Yamaguchi, Seki mackerel from Oita and squid and prawn from Tokushima.
