Kohaku

Koji Koizumi is a fait with the characteristics of the ingredients and his dishes are Japanese through and through, but with a modern touch. He also uses Western ingredients like truffles and foie gras to come up with new Japanese dishes. For example, beef shabu-shabu dipped in katsuo dashi is garnished with truffles and sprinkled with salted kombu, and fried unagi comes with sansho salt containing star anise.
