The owner-chef favours akatori chicken from Kagoshima for the fragrance of its meat and texture. Skewers are prepared with care and only lightly salted. Distinctive to this restaurant is how the items are grilled quickly over high heat so that the flavour is not too smoky and the meat is not overdone. Light dipping sauces bring the native flavours of the ingredients to the fore. To finish, order the ochazuke, graced with an elegant chicken dashi.
