With a twisted headband around his brow and a paper fan tucked into his waistband, the owner-chef nimbly tends the charcoals. He uses a brand-name chicken from Fukushima, with pale flesh and sweet skin. The bird is purchased whole, so the innards are as fresh as can be. The yakitori is served omakase – just call a halt when you’re done. The restaurant is popular – reservations are taken two months in advance on the first business day of every month.
