Makimura

Akio Makimura serves the kind of dishes that stay in the memory. To accomplish this, he does not put a lot of ingredients on a single dish. Generally, it is a pairing of two main ingredients, like steamedawabi with raw uni then covered in awabi liver sauce, or grilled eggplant with roast beef. Rice from the stove comes into its own with the tai-chazuke speciality, which has been refined over the years.
