Ren

Ren means “lotus”, and it is in the purity of spirit associated with that flower that the head chef approaches his cooking – he follows the ethos of Kagurazaka Ishikawa. Enjoy dishes such as wild vegetable shabu-shabu and grilled, unpeeled bamboo shoots in the spring, hamo in the summer, chargrilled matsutake in the autumn and matsubagani shinjo in nimono soup in the winter.
