Higashiazabu Amamoto

The owner-chef procures about 25 different kinds of fish from a trusted supplier – he studied Japanese cuisine so is thoroughly familiar with the characteristics of different fish. For example, he cuts the front of squid vertically and the back horizontally to bring out the sweetness. The long hand of the clock will go around three times, perhaps, by the time you’re done, but his hospitality will make you forget the hour. Reservations are online only.
