Sushi Kojima

The owner-chef worked at a hotel in Tokyo before opening this restaurant. He procures white-fleshed fish, tuna, silver-skinned fish, prawns and other items from the respective specialised vendors. It is orthodox Edomae sushi, featuring items like gizzard shad topped with boiled, shredded, parched, and seasoned egg yolk, flounder kobujime, boiled anago and pickled tuna. Slightly sweet nikiri is used instead of sugar to give the rice balance.
