Sushi Hachizaemon

The owner-chef had a restaurant in Yokohama before opening here in Ginza. He emphasises nigiri because he wants to focus on conventional Edomae-style sushi. There are limited toppings, as he only uses seafood that’s in season. The same topping often appears twice in a row, but he adds a touch like making one with salt and sudachi and the next with nikiri so diners don’t get bored. The skill used to create the rolled omelette is also sure to impress.
