Sushiya Ichiyanagi

The owner-chef has the artisanal spirit and pursues his own style of Edomae sushi. Most restaurants have omakase menus that start with snacks – the emphasis here is on nigiri, so this one has a nigiri set menu as well. The firmly steamed rice allows the texture to be savoured. To ensure harmony with the topping, the vinegared rice is warmer than usual. The star item is bluefin tuna. Finish with anago seasoned with citrus and salt.
