The chef emphasises the tastes of local cuisine that he studied in various places in Italy. Adding his own sensibilities, he draws out the natural flavours of the ingredients. Standard appetisers include swordfish and herb carpaccio and tripe with potherbs in white wine. The pasta is handmade to set the restaurant apart from the rest. The speciality is tajarin made with truffles. The main dish is a meat dish such as wagyu or deer.
