Owner-chef Shinichi Iida uses serving dishes by Rosanjin, who noted that “serving dishes are the kimono of cooking”, along with antiques like Raku Ware and Baccarat x Tojiro Harumi. The menu changes monthly: spring soup features carp with grilled awa-fu and leek; in summer ayu is grilled over a charcoal flame. In the autumn, moon-shaped kudzu tofu made from soy milk is served in soup. In the winter, fugu tessa comes with sieved shirako.
