Hyotei

This restaurant has watched over Kyoto for more than 400 years from within the Nanzenji Temple grounds; it started as a tea house for those on a pilgrimage to the temple. 14th-generation owner-chef Eiichi Takahashi uses a stock containing dried tuna and Rishiri kelp. The mukozuke is sea bream sashimi with Tosa soy sauce; the white miso soup with raw Shonai-fu and mustard has a deep flavour. Also known for the hyotei-tamago.
