Mizai

Mizai comes from the Zen term meaning ‘not there yet’ and expresses Hitoshi Ishihara’s way of life – always aiming high. Guests are served together, based on the ‘one time, one meeting’ concept with everyone sharing the same joy. In accordance with the flow of chakaiseki, the meal begins with rice, soup and mukozuke. The extravagant tsukuri and hassun are highlights. To experience this inspirational meal, you’ll need to book 1 year in advance.
