The owner comes from a ryotei background, while the chef studied French and meat processing techniques. The restaurant serves new Japanese cuisine that combines Western ingredients with a kaiseki menu. Tsukuri is garnished with vegetable purée and cheese, and rice cooked in an earthenware pot is mixed with sautéed foie gras. Taking advantage of seasonal ingredients, flavour and body are brought out by adding oils and dairy products.
