This restaurant was opened by a chef and sommelier who both trained in Kyoto. Northern European furniture collected over many years graces the interior, and wine ready for drinking is kept in a glassed off repository. The chef uses ingredients based on Japan’s four seasons and is unbound by Italian tradition. There are no standard offerings, because he wants to continually improve and create simple, memorable dishes.
