Oshikoji Okada

The owner-chef learned from a master chef in Gion and serves orthodox kaiseki cuisine that emphasises the seasons. They are expressed with first-harvest, in-season and last-harvest ingredients. In spring, he’s particular about the serving dishes, using lacquered bowls with a cherry blossom design for the soup and clam shell-shaped plates for the mukozuke. The mocha rice is topped with bamboo shoots, ayu, matsutake, crab and other seasonal items, and steamed.
