As the culmination of his efforts, the owner-chef opened his restaurant in his grandmother’s hometown, a place full of memories. He focuses on local ingredients, and the name of the restaurant comes from the old name for the neighbourhood. In spring, he sprinkles hanasansho picked in Oharano over grilled bamboo shoots. Serving chargrilled ayu from both the Miyamagawa River and the Katsuragawa River for comparison is a novel idea. The beef stew in winter is cooked with miso.
