Sushi Rakumi

This is the sister restaurant of Gion Sasaki, specialising in Edomae sushi. The snacks showcase Japanese culinary techniques, such as slow-steamed awabi covered in awabi liver sauce and katsuo served with a paste made from shuto. The star nigari is tuna with akazu-seasoned rice - the first is marinated lean tuna, and the climax is medium-fatty and fatty tuna. Another highlight is how the chef prepares the rice in front of the customer and grills the anago over bamboo leaves.
