Bini

The name “Bini” is the surname of the chef’s former teacher in Tuscany, while the maple leaf in the logo comes from the prefectural tree of Hiroshima, where he was born and raised. He incorporates his own style into the set menus, not confining himself to Italian. This includes fermenting vegetables and fish sauce to increase flavour. The speciality at lunch is the plate of Ohara vegetables, and at dinner it’s foie gras and scallop terrine.
