Kashiwaya

Hideaki Matsuo, the second-generation owner-chef, was inspired by the spirit of the tea ceremony in Kyoto. The items on the menu are all classical dishes with an added twist; for example, the red sea bream and squid dishes are dressed in apricot pulp sauce and Matsumae soy sauce, and the tilefish speciality is cooked after being marinated in fermented shrimp paste.
