Chi-Fu

Here French cooking techniques give traditional Chinese cuisine a modern touch. The speciality is ‘Kaosufung’, a Shojin dish resembling Peking duck, but of vegetables wrapped in a crust made from pumpkin or mugwort. The chef’s experience with French cuisine is evident in the kinmedai cooked at low heat and the lamb grilled with spices. The spices are not overpowering, and the refined arrangement and seasoning are what make the fare here.
