Sushi Ohata

The owner-chef aims for the kind of Edomae sushi that only someone from Kansai would create. Using seafood from Setouchi and Toyosu, he employs Edomae techniques with the toppings, which include the white-fleshed fish preferred in Osaka. Based on the individual characteristics of the fish, he makes three kinds of sushi rice: ‘white’ with rice vinegar for white-fleshed fish, ‘red’ with akazu for tuna, and ‘pink’ with a blend of rice vinegar and akazu.
