Sushi Murakami Jiro

The owner-chef says the best seafood is sold at Toyosu and does not limit himself to inshore catches. According to him, akazu goes with all toppings, so he uses it to make the rice. The first nigari is tuna, the essential topping. He prizes Osaka’s food culture, so focuses on white-fleshed fish and the texture of fresh-caught produce. He also displays creativity, marinating kasugodai in ume vinegar and garnishing squid with malted rice.
