Emphasising the season, the owner-chef adds unseen extra touches, and never to the point of extravagance. For example, the firefly squid in spring is placed on mocha rice, steamed and then coated with green laver paste. Essential menu items like soup and boiled foods, which test the skills of a chef, are also exquisitely prepared. The owner-chef’s spirit of hospitality, cultivated in Kyoto, is evident in the Kyo-ware and in how he sees you off at the end.
